Carlos Wong is a Peruvian chef of Cantonese descent, raised in a home where the flavors of coastal Peruvian cuisine and the traditions of southern China blended naturally. This dual heritage shaped my palate and instilled in me a deep respect for authenticity, technique, and cultural storytelling through food
